Equipment

  • Baking sheet
  • Parchment paper
  • Mixing bowls
  • Whisk
  • Tongs

Ingredients

  • 1 lb 450g white fish fillets (cod, tilapia, or haddock)
  • 1 cup breadcrumbs plain or panko
  • 1/2 cup grated Parmesan cheese
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • 2 tbsp all-purpose flour
  • Cooking spray or olive oil

Instructions

  • Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.
  • Prepare the Coating: In a shallow bowl, mix the breadcrumbs, Parmesan cheese, paprika, garlic powder, salt, and black pepper.
  • Set Up the Breading Station: In another bowl, whisk the eggs. Place the flour in a separate bowl.
  • Coat the Fish: Cut the fish fillets into 1-inch-wide strips. Dip each strip into the flour, then the egg, and finally the breadcrumb mixture, pressing gently to ensure the coating sticks.
  • Arrange on Baking Sheet: Place the coated fish sticks on the prepared baking sheet in a single layer. Lightly spray the tops with cooking spray or drizzle with olive oil for extra crispiness.
  • Bake: Bake in the preheated oven for 12-15 minutes, flipping halfway through, until the fish is cooked through and the coating is golden and crispy.
  • Serve: Serve immediately with tartar sauce, ketchup, or your favorite dipping sauce.

Notes

  • For a gluten-free version, use gluten-free breadcrumbs and flour.
  • These fish sticks can be frozen after baking. Reheat in the oven at 375°F (190°C) for 10-12 minutes until heated through.
  • Experiment with different seasonings, such as adding cayenne pepper for a spicy kick or Italian herbs for extra flavor
